Realities of Running a Chef-Owned Restaurant
Every man and his dog seem to want to set up a restaurant these days. Reality check: Two thirds of restaurants don’t survive past their first birthday. People fall in love with an idea and don’t want to learn their craft (and it is), which takes years — time and commitment.
The Worm & the Apple–accepting less than perfection?
There is a long standing association between worms and apples, though in modern culture today we never see worms in our produce. It probably had to do with the days when fruit was grown with no pesticides and you never knew when you bit into an apple if there would be a worm or not. Continue reading

We Stomached….. the NYC PIZZA RUN 2014
Running two miles is hard enough to some. Running two miles while eating a slice of pizza after every lap? That could be hard to stomach. The NYC PIZZA RUN premise is simple: Chow three slices of pizza from Pizza by Certe’ while running 2.25 miles through the East Village around Tompkins Square Park. As the OFFICIAL SUPPLIER of the Pizza, of course we participated!
Our Team looked great afterwards, don’t you think?

Picnic Season is in Full Swing!
OVERPLAYED (food trends that used to be cool but now are commonplace)
We’re generally a little dubious about lists of food trends here at Certe’. We are not fans of What’s Hot and What’s Not—we like to leave that up to our clients’ requests (always right!!). Each person’s food preferences are extremely subjective, and influenced more by upbringing (Mama) and geography (your hood) than anything else. Just to clear, we are Not saying we dislike these items, nor or we saying anything negative. Common can be compared to popular.
In It Together—FDNY & Certe’–2013 NYC Marathon
We were proud to be able to again provide complimentary food for New York’s Bravest who ran this year’s Marathon!
Over 300 FDNY members took part in the 2013 NYC Marathon on Nov. 3. FDNY bested the NYPD for the 10th straight year with a time of 2.59. Mayors Cup standings are: FDNY- 26… NYPD-4.
Pumpkin isn’t just for Pie. Anymore. (by Chef Edward Sylvia)
Surely one of the great things of the Fall season, is the smell of freshly baked Pumpkin anything. So, yes, I am including the Pumpkin Pie recipe I made, but there are a couple of other things you can make with the entire Pumpkin too. Ahh, pumpkin pie made from a fresh pumpkin tastes so much better than the glop that was processed last year. Don’t let it scare you off, the pie pulls together pretty quickly and is really not that difficult. This Pumpkin was a joint effort with my kids. Share with some very lucky people! (but choose them wisely…)
There is something magical about a carved pumpkin with a candle glowing inside to celebrate a crisp fall evening. …Especially a Bi-Polar Pumpkin that turns into Pumpkin Pie-Polar. So, is YOUR Pumpkin ready?
All photos by Alexandra Sylvia—pretty good job, huh?

NYC Pizza Run 2013 — Fitness AND Pizza
On a Saturday morning in September, 120 people — some runners, some speed walkers, some super fans of pizza and US — gathered at Tompkins Square Park for the annual NYC Pizza Run. Two unlikely forces combined: Running and pizza. It seems antithetical that this activity would pair with this food (or any food for that matter) but consider your mind blown.
